Fudge Walnut Bar

I got this recipe from a book called The Raw Transformation and I changed it a bit. These amounts made about 10 small bars:

Base

  • 1 c ground walnuts
  • 1.5c rolled oat groats
  • 1/4 c dried shredded coconut flakes
  • 1/4 c agave
  • 2-3 T olive oil
  • 1 t vanilla

Topping

  • 1/2 c almond butter (I didn’t have any so I soaked almonds a few hours, rinsed, then ground in processor for a long time)
  • 1/4 c cacao powder or more to taste
  • 1/4 c agave
  • 1 t nama shoyu (I used Bragg’s Liquid Aminos)
  • 1 T coconut oil or more to taste

Put base ingredients in food processor and blend until doughy. Add more agave or oil if it seems dry or like it might not stick together.  Lay out on teflex sheet and flatten until about 1/4″ thick.  Dehydrate until chewy. OR if you don’t have a dehydrator just put it in a shallow Tupperware or something and chill in fridge until more solid. Blend the topping ingredients in food processor until smooth, then spread over the base. Score with knife into bars whatever size you want.
